Lavender Lemonade
Lavender carrying the floral note, lemon keeping it honest.

Makes a pitcher, about six glasses. Ten minutes, plus time to chill.
Ingredients
- 3/4 cup English lavender simple syrup, more to taste
- 1 cup fresh lemon juice, from about six lemons
- 4 cups cold water
- Ice, plenty
- Lemon slices and a lavender sprig, to finish
Steps
- Juice the lemons and strain the seeds.
- In a pitcher, stir the lemon juice and lavender syrup together until the syrup is fully in.
- Add the cold water and stir.
- Taste. Lavender climbs fast, so add more syrup a little at a time. It should read lemon first, lavender second.
- Chill, or pour over plenty of ice. Finish with a lemon slice and a lavender sprig.
Notes
Go easy on the lavender
Lavender turns soapy when there is too much of it. Start at three-quarters of a cup of syrup for the whole pitcher and climb only if it needs it.
Make it sparkling
Swap two cups of the water for cold club soda, added at the end so the bubbles hold.
