INGREDIENTS: WATER, ORGANIC CANE SUGAR, LOCAL HONEY, ENGLISH LAVENDER

English lavender, cut from the row along the garden-bed fence and cooked down in June. The honey goes in with the cane sugar, so the syrup lands floral and round instead of sharp. It tastes like lavender, not soap and not perfume. A little carries a long way.

This is the June batch. The lavender came off the fence line in bloom and went into the pot the same day, so the color holds pale gold and the scent stays close to the plant.

Stir it into lemonade or a gin fizz, brush it over a lemon cake, or pour a little into iced tea. Start small and add from there.

How we use it

What's in it

Water. Organic cane sugar. Local honey. English lavender, cut from the fence line. No lemon. No extracts. Nothing else.

Care and keeping

Keep the bottle in the cupboard until you open it. Once opened, refrigerate and use within a month.

A little lavender may settle out. That is the flowers, not a fault. Shake before pouring.
