Oregano Herb Vinaigrette

A basic vinaigrette with a few drops of oregano tincture stirred in.

Makes about half a cup. Five minutes.

Ingredients

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 small clove garlic, grated
  • 5 to 10 drops oregano tincture, to taste
  • Salt and black pepper

Steps

  1. In a small jar, combine the vinegar, Dijon, garlic, a good pinch of salt, and pepper.
  2. Add the olive oil. Put the lid on and shake hard, or whisk, until it comes together.
  3. Add the oregano tincture five drops at a time, tasting as you go. It is concentrated, so build up slowly.
  4. Taste for salt and acid. Use right away, or keep in the jar and shake again before the next salad.

Notes

How many drops

Five drops gives a quiet oregano hum. Ten makes it the headline. Start low, you cannot take it back out.

Beyond salad

This is good brushed on grilled vegetables, spooned over white beans, or tossed with warm potatoes.
